MEXICAN BLACK BEANS RECIPE



Ingredients
  • 2 15.5 oz cans black beans (do not rinse)
  • 1 tablespoon vegetable oil or bacon grease (I personally prefer bacon grease)
  • 1 small white onion, chopped
  • 3 garlic cloves, minced
  • 2 jalapeno peppers, seeded, minced
  • 1 4 oz can diced green chiles
  • 1 tablespoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup chopped fresh cilantro
  • Juice from 1/2 lime
  • salt and pepper to taste
  • Freshly crumbled Cotija cheese, chopped cilantro for garnish
Instructions
  1. Sauté the chopped onion, garlic, and jalapeno until softened, about 1-2 minutes.
  2. Add black beans (including liquid), green chiles, cumin, chili powder, and cayenne. Stir to combine, bring to a simmer, and cook for about 10 minutes.
  3. Remove from heat.
  4. Stir in the cilantro and add juice from 1/2 of a lime.
  5. Add salt and pepper to taste.
  6. Garnish with freshly crumbled Cotija cheese and chopped cilantro.
